Chef James Soo Yong Kim is passionate about ‘creating something purely Abu Dhabi’
James Kim was a man of many qualities, with undeniable creativity. Before embarking on his culinary adventures, he started his fashion career. Kim has an impressive résumé, having topped several Michelin-starred restaurants in New York, including Acme, Balthazar, Blanca, Caviar Russe and Le Cirque. The seven scheduled restaurants aren’t the famous chef’s first gourmet date with the capital, with Café James recently opening on Al Reem Island and already recruiting a loyal following of foodies.
Chef Kim works as architect and executive chef on all projects in the UAE. His other achievements include the design of Al Ain Ritual and WKND Dubai.
In 2019, the accomplished chef became chief executive of Abu Dhabi-based homegrown brand White Hospitality Group, which is gearing up for an ambitious year with seven fine dining projects in hopes of pioneering the A new era of gastronomy in the city.
In addition to the existing Cafe James and Cafe Kumiko in Abu Dhabi, his next venture will be to open Les Dangereux on Mamsha Saadiyat’s stunning Soul Beach, serving fine French cuisine. Here he will be working with his “culinary heroes” Llorenc Garcia Sagarra and Daniel Lasa. Sagarra will join as co-chef, having previously worked at the internationally acclaimed Mugaritz restaurant in Spain and ranked No. 21 on the 2022 World’s Top 50.
A particular highlight is Chef Kim’s Korean concept, which is an ode to his heritage. Mr Kim Restaurant on Yas Island hopes to express the true taste of Korea, bringing guests to the streets of Gangnam.los angeles artist Tommy Lin All murals will be designed for this venue, bringing artistic edge and unique brilliance. It will also be the only licensed venue within the hotel – so expect lots of chops and soju.
With a passion for architectural decoration that will be proud of in all venues, Al Seef’s White Smoke aims to recreate the feeling of sitting under a mild rainfall. This will be achieved through a glass extension fitted with 850 custom nozzles, with visual effects that mimic the feel of rain and falling in Seattle.
Another unique addition to the seven announced programs is the unlicensed Cafe Day and Nite, which run on an invitation-only and reservation-only cafe basis, with menus that change every three months. The venue will feature a day room and a night room, showcasing full-size wall-mounted LCD panels that will show black-and-white films of Kim’s travels to Paris, Mexico City, Seoul and Rhabatt. The bar will be at the center, serving as a stage for the chef to finish all the dishes. The venue will feature a drinks menu including craft mocktails, crafted in collaboration with Mugaritz Director of Research and Development Dani Lasa.
With the establishment of White Farms, Chef Kim is also committed to bringing sustainability to the forefront of these projects. This includes a 52-greenhouse organic farm in Al Ain that will offer a true farm-to-table dining concept utilizing fresh, locally sourced produce.
Details like this are meant to further Kim’s desire to redefine the culinary scene, carefully selecting ingredients to bring out the flavors needed to make Abu Dhabi a true culinary capital. Kim’s venue was born out of a desire to move away from generic conceptual elements of the city, and an obsession with creating something uniquely Abu Dhabi.
His career didn’t end there, with the launch of his eighth project, MRSSM, in Saudi Arabia.
We don’t have any further information on opening dates for each venue at this time, but be sure to keep an eye on this space for more details so follow along in the coming weeks.
