Innovative tasting menu of international Michelin chefs from Expo 2020…
The 2020 World Expo itself is a dining destination, where world-renowned chefs and local cuisines collide. A new concept that combines the two is Jubilee Gastronomy.
Located on the ninth floor of the media center, Jubilee’s schtick provides a unique culinary experience on its iconic “Chef’s Table”. Two internationally renowned Michelin-affiliated chefs take turns serving as a residence between local celebrity chefs.

The good thing about this job is that when chef Jordan Bailey was in town, we managed to get a place in the nine-course dinner tasting experience. This Cornish native is the chef of Aimsir, Ireland, and the restaurant won the honor of being the fastest direct two-star restaurant in the history of the Michelin Guide (within five months).
His wine pairing menu took us to taste some of his most famous dishes.
There is a delicate oyster, lightly heated in grilled koji butter, with exciting apple balsamic vinegar, and an incredible soda bread cooked with beef fat, topped with raw, heavy salted butter As a dish for yourself. The core of the meal was an inch-thick roast duck breast with loose salt on it. The man brought it up by himself. He sneaked in and said hello, and poured a big mouthful of five-year-old cherry balsamic vinegar. Very good, only ducks can do that in that rich and interesting way.
Not everyone is a universal caterer. Young buck cheese with ripe figs, topped with crispy fig leaves and oil, is challenging in terms of texture and unfamiliar flavor combinations. But the end is ice cream with dandelion root jam and cookie “twigs”, which is a pleasant way to end the night.
When we walked back to the parking lot, we reveled in the night experience. It feels like we are dining abroad, in the environment of a Michelin-starred restaurant, but never really left Dubai. It’s really a treat. I think this is the real charm of the Expo.
