Dusit Thani Abu Dhabi appoints executive chef

Dusit Thani Abu Dhabi, the leading five-star hotel in the UAE capital, has appointed Fernando Galbiati as its new Executive Chef and Nanir Nissanka as its new Pastry Chef.

Fernando has worked hard due to the opportunity to be the Kitchen Leader of prestigious brands such as Fairmont at Cavalli Club, Jumeirah Hilton at Bice Restaurant, Waldorf Astoria, Orion and Bulgari Resorts and Residences. Before his Middle East experience, he started his career in Europe, especially in Italy and London, where his first opportunity was at the Splendido hotel Portofino.

He joins Dusit Thani Abu Dhabi after most recently serving as Head Chef at the Bulgari Resort and Residences in Dubai.

Working mainly in the Middle East for European brands and restaurants for the past 10 years, he wanted to bring the classic flavors of Italian and Mediterranean cuisine to Dusit Thani. His training was under the tutelage of a very hard-working, passionate chef, part of a generation of chefs who were able to combine old classic techniques with new technologies and open the door to creativity. Passionate and driven, he is ready to welcome and train a new generation of chefs, fostering their passion and helping them grow into leaders.

Fernando is ready for new opportunities and experiences as he takes on a diverse culinary and chef role at the iconic Dusit Thani store in Ireland, Thailand and India.

A seasoned chef, Nanir joins Dusit Thani with over 13 years of experience in pastry cooking. He has worked under and alongside multinational chefs at Crowne Plaza Emirates and Cove Rotana with backgrounds in fine dining. He started his career at the Holiday Inn in his native Sri Lanka, followed by the Marriott in Riyadh.

He most recently worked as a pastry chef at Cove Rotana in Ras Al Khaimah before joining Dusit Thani Abu Dhabi.

Working primarily with international hotel brands in the UAE, catering to various restaurants, he developed his pastry skills and perfected his patisserie under the tutelage of a French chef for the better part of 3 years. He does everything with one goal in mind, which is to lead a pastry kitchen. He brings passion and experience to Dusit Thani Hotels and is trained in wedding cakes and ready to start making his mark on someone’s special day.Chocolate work is part of his many talents and loves the ingenuity of it

Nanir has always enjoyed experimenting with flavours, and now he is excited to bring his signature recipes to Dusit Thani Abu Dhabi. He is ready to work with an international team of chefs so he can learn to make their favorite pastries and impress them with his selection and flair. – trade arab news agency
