Gulfood 2023 witnesses the launch of World Cuisine Dubai

Gulfood 2023, the world’s largest annual food and drink sourcing event, looks set to have a lasting impact on Dubai’s culinary identity with the launch of Dubai World Cuisine.

The new campaign aims to provide a platform for Emirati chefs to collectively shape Dubai’s cultural identity, further establishing the city as a global gastronomic capital.

Thanks to incredible growth and market maturity, Dubai has evolved from importing the best culinary ideas from around the world to an incubator for a homegrown culinary movement capable of producing Michelin-starred restaurants.

The Thriving Culinary Landscape

The city’s burgeoning culinary scene has been recognized with the arrival of the gourmet food guide Gault&Millau UAE, the Michelin guide Dubai and the 50 best restaurants in the Middle East and North Africa.

Many chefs at Dubai’s leading restaurants are fusing cuisines, styles and ingredients to create new and original concepts that reflect the city’s unique status as a melting pot of cultures. The Dubai World Food Campaign will seek to promote these chefs, starting with this year’s Gulfood and running a series of events over the next few years.

Dubai World Food Concepts will drive the agenda of this year’s Top Table, where the world’s best curators of award-winning dining experiences will present their creations in the huge new bespoke hall, Gulfood Plus, through a series of fascinating masterclasses. Signature dishes and demonstrations.

Dubai’s World Food Initiative will host 7 iconic global chefs – 5 from Singapore, 1 from Norway and 1 from Italy – in February at 6 restaurants in Dubai for after-hours dinners outside Gulfood across the city Fringe Dinner, a one-night collaboration presenting a never-before-seen menu.

Food connoisseurs can indulge in a total culinary experience, starting with a chef’s masterclass during the show and ending the evening with a unique 4-hand tasting menu created by the chef.

A key element of Dubai’s World Food Campaign will see Dubai chefs collaborate with their counterparts from other international culinary hotspots, with a focus on Michelin-starred chefs from Singapore.

Singapore has a multicultural culinary scene, chefs from all over the world come here for the first time, face similar challenges, and gain a platform to develop and promote their own cuisine, so Singapore is a natural partner for the inaugural World Gastronomy Dubai.

Kim Johnny – Maureen

The first dinner will be cooked to perfection by Chef Kim Joinié-Maurin of Jumeirah Al Qasr, French Riviera Beach, Dubai, and Louis Han, winner of the Michelin Guide Singapore Young Chef Award 2022 and founder of NAE:UM Singapore Chef Modern French cuisine harmoniously blended with Korean traditional flavors.

The second dinner will be joined by Giovanni Papi of the one-Michelin-starred Armani Ristorante and Michael Wilson of the one-Michelin-starred Marguerite, known for spearheading a new culinary movement that is taking over Singapore’s fine dining restaurants.

Dinner on the third night will feature an unconventional dessert experience with Michelin-starred Basque cuisine, including Carmen Rueda from Brix Desserts and Aitor Jeronimo Orive from Basque Kitchen in Aitor, Singapore’s first Basque-centric restaurant restaurant, designed to celebrate the country’s indigenous culture and produce. Aitor Orive has had an illustrious career in some of the finest dining destinations in the world, including three Michelin stars “The Fat Duck”, two Michelin stars “Mugaritz”, one Michelin star “Nerua Guggenheim Bilbao” and the acclaimed “Iggy’s”.

Saverio Sbarragli

The fourth dinner will feature a reinvention of New Italian Cuisine by Saverio Sbaragli of Burj Al Arab, Dubai’s one-Michelin star restaurant, and Daniele Sperindio of Singapore’s Art, acclaimed for his ‘conversational cuisine’, and presenting exquisite signature dishes with deep Rooted in poetry and art.

The fifth dinner will feature Michelin Guide’s “Chef of the Year 2022” Gregoire Berger (from the famous Ossiano in Atlantis) and Esben Holmboe Bang, chef and co-owner of Norway’s groundbreaking three-Michelin star restaurant Extraordinary Michelin star experience – star restaurant Maaemo. Esben Holmboe Bang, one of the youngest chefs to be awarded not only 3 Michelin stars but also a Green Michelin star, is one of the most anticipated culinary personalities heading to Dubai this year for his innovative use of fresh ingredients.

The sixth dinner will feature Folly’s Executive Chef Bojan Cirjanic and Cure Singapore’s Chef and Owner Andrew Walsh, who pioneered the “pubology” concept at Cure, making it one of Singapore’s top dining venues.

Heinz Baker

The gala dinner will culminate on 24 February with renowned 3 Michelin star chef Heinz Beck presenting a unique culinary experience at Al Muntaha in Burj Al Arab with Saverio Sbaragli.

Sbargali commented: “I look forward to presenting to our guests not one, but two 4-hand dining experiences at Al Muntaha at Burj Al Arab with renowned chefs Daniele Sperindio and Heinz Beck. Dubai The World Food Platform offers chefs a unique opportunity to collaborate, bringing our best talents to the table and providing guests with a once-in-a-lifetime dining experience.”

Commenting on the initiative, Han said: “I’m excited to be working with Chef Kim and can’t wait to showcase Korean traditional flavors on the international stage. After starting my career in Abu Dhabi, Gulfood gave me a fresh start This is a great opportunity for me to learn from internationally renowned chefs and inspire our creativity through the exchange of inspiration.”

Get an up-close look at the star-studded line-up of chefs at the Top Table Masterclass at Dubai World Trade Center from 20-24 February. The 28th Gulfood will also feature Chef Talks, offering insights from around the globe from chefs, food editors and influencers in the culinary world.
