Who are you and what makes you famous in the UAE?
I am Ramie Murray, I am an oyster farmer, and I founded the first and only gourmet oyster farm in the Middle East.
where are you from? How long have you been in Dubai?
I come from Scotland and have lived in Dubai for almost 30 years.
Dibba Bay Oysters is the first choice of many top restaurants in the UAE. How did all this happen?
When we first launched it, we had to do a lot of work to introduce the product, only face-to-face tasting and explanation were needed to convince the chef to take locally grown oysters seriously. Thankfully, the quality of the product speaks for itself, so it is a matter of visiting as many restaurants as possible.
Once the chefs tasted the oysters, it was an instant victory, especially considering the highly discerning and international cooking scene of the UAE. We fight side by side with the best imported oysters.
What makes Diba Bay oysters so unique?
Diba Bay oysters are unique in several ways, mainly their unique shell and meat quality.
Thanks to the unique marine conditions that have made Arabia famous for its shiny white pearls, the Dibba Bay oyster showcases the heritage of the region through its unique and vibrant white and golden-spotted shells. This is due to the high content of calcite in the water, which comes from the limestone cliffs in Dibba. The unique qualities of the waters of the emirate have historically been demonstrated through the legendary white pearls, and now continue to exist through the oyster shells of Dibba Bay.
How do they taste?
Our oysters are very meaty and very plump. Due to the abundant supply of phytoplankton in the water, our oysters have an unusually high meat-to-shell ratio, and are usually nearly 30% higher than other oysters on the market (depending on the season,
certainly).
In your opinion, what is the correct way to eat oysters?
Dibba Bay oysters offer three of the four main flavors; umami, sweetness and salt, in a very balanced way, so you can happily eat them individually. However, a little acidity adds to the fourth main flavor, which is suitable for lemon, lime or balsamic vinegar. I said, try pomegranate vinegar and chopped green onions to add regional flavors to French classics.
