A six-course experience designed to achieve zero waste…
after the great success Last year’s cooperation With renowned passionate sustainable food champions – Boca (notably Chef Matthijs Stinnissen), W Abu Dhabi – Yas Island is returning to eco-friendly, minimal waste dining extravaganza Looped-In with some new creative partners .
The 2023 edition will take place on Tuesday 31 January at the breezy open air venue Amici Terrace. The evening’s six-course dinner was curated by Executive Chef Deivid Paiva of W Abu Dhabi Yas Island as a manifesto on how food goes hand in hand with improving our green footprint.
Other contributing partners include Lyre’s Non Alcoholic Spirits – who will provide support in the form of craft concoctions, while candles from The Gloe Company will ensure the night stays bright even when the lights go out. This is the carbon thing.
One of the core reasons for putting together this elaborate dinner and sharing it with the public was to get more people to discuss and learn how we can get better with sustainable food practices. While still making sure the other creative aspects of cooking keep moving forward.
It’s only two years old now, but the desire for zero-waste meals already feels like a great tradition on the Looped In menu. The kitchen team are also keen to share tips with diners on how to use the whole of a particular produce; choose produce that tastes great even though it may not look appealing; use uncommon cuts of meat; and of course, buy seasonal fruit and vegetables .
Some of Chef Deivid’s specials for the evening include ripe tomato jelly and local feta mousse; diced tuile bread topped with basil sauce; or oxtail ravioli with Parmesan rind cream and black truffle sauce.
