I’ve made a few different potato soups over the years and this has become my go-to version when I want something simple but delicious. Everything can be cooked at once, in just a few hours if desired, and blended into a creamy texture perfect for cold nights.
How to Cube Potatoes
One of the best tips I can give you about making this soup – or any recipe that involves cooking potato cubes – is to make sure they are the same size and therefore the same cooking time. What is the best way? It’s that simple: brackets, planks, sticks, cubes.
- First, cut off one end of the potato so it has a flat surface to stand on.
- Cut down and cut the potatoes into planks.
- Then cut the board into strips.
- Finally, cut the sticks into cubes.

How to Make Easy Potato Soup
1. Combine all ingredients except milk and chives in a crock pot. Stir well. Cook on high for 3-4 hours.
2. When the potatoes are soft, stir again. Using an immersion blender, blend until smooth. Add milk and stir again. Cook for another 10 minutes to heat through.
3. Serve immediately, or keep in a warm environment. Garnish with dried chives if desired.

How to Thicken Potato Soup
Once your soup is pureed, use a cornstarch slurry to thicken it if it’s not thick enough. The slurry was a 2:1 ratio of cornstarch to water. Try stirring 2 tablespoons of cornstarch with 1/4 cup of water. Stir into soup and cook for about 30 minutes until thickened.
