Following last year’s successful evening, W Abu Dhabi – Yas Island will once again host a culinary celebration that engages Abu Dhabi’s residents in the conversation. W Abu Dhabi Yas Island has teamed up with BOCA Restaurant in 2022 to breathe life into the first edition of this unique event: featuring a no-waste menu, imaginative interpretations of local ingredients, and responsible Questions to start an open and honest conversation about cooking.
To educate viewers on how to improve their green footprint in everyday life, W Abu Dhabi – Yas Island brings back Looped: Welcoming conscious tastemakers and visionaries around a table for a meal that drives everyone’s agenda Get something green for an unmistakable W style. The conversation features W Abu Dhabi’s new executive chef, Yas Island Deivid Paiva, who will join forces with W Abu Dhabi’s beverage and food teams, Lyre’s Non Alcoholic Spirits and The Gloe Company to expand around A conversation about good practices in and out of the kitchen.
Throughout the evening, diners will have the opportunity to explore a journey of taste, aroma and sound, with surprises in every dish. A curated six-course menu will showcase innovative techniques used to reduce waste in the kitchen, while introducing guests to simple techniques they can use in their everyday lives, such as using produce whole, choosing the perfect local supplier for products that don’t look right, And use unknown or unusual cuts of meat. Some of Chef Deivid’s creations will include ripe tomato jelly, local feta mousse, Tuile bread cuts and finished with basil sauce; or oxtail ravioli with Parmesan rind cream and black truffle sauce.
Deivid Paiva has over 15 years experience in the hotel and F&B industry, having worked in some of the most prestigious 5 star luxury hotels including Jumeirah, Shangri-La and Ritz Carlton. Thanks to his experience all over the world, his cuisine creatively straddles classics and modern techniques, with a special emphasis on local products. Values every ingredient that enters his kitchen and strives to maximize every part of the product in his daily production. Chef Deivid’s aim has always been to make his cuisine product-driven, following and teaching the following statement as a guiding principle of his culinary philosophy: “When you respect every vegetable and every meat that enters your kitchen, even things like carrots Just as underrated, is that the only way you can call yourself a real chef?”
