Majid Al Futtaim-Accor culinary team wins Gold at Hotel Show

The culinary team of Majid Al Futtaim – Accor Properties has won a gold medal at the Chefs Table competition at the Dubai World Trade Center Hotel Show.

The team is led by Chef Roziro Mathias, Executive Chef and Chef Dammika Herath, Executive Pastry Chef. The chef and service team offer a 5-course set menu as well as two exciting drink and coffee creations.

The service team has also received certificates, awards and gold medals for their outstanding service.

Chef Roziro Mathias and his team of chefs have curated a special menu of three hors d’oeuvres – turkey mince croquettes fried until golden, served with a rich tamarind chutney, beef brisket, baby jackfruit, and Puff bread and cream cheese, savory wild mushrooms in chives, blueberry glaze on crepes.

Appetizers were apples, celery, melon, jelly, sea bass roulade, salmon confit with poached rock squash, orange juice and beluga caviar. For soup, they added heirloom tomato cappuccino with basilico—a foam made with a drizzle of basil oil, arugula leaves, kalamata olive powder, and parmesan.

For mains, they serve Angus tri-tip, brisket, red cabbage, peppers, wild mushrooms, mashed potatoes sweetened with caramelized shallots, served with crispy roasted broccoli, edamame mash, and fresh black truffles. For dessert, the menu features Valrhona Gran Couva Chocolate 64% (established 25 years ago) mousse with grapefruit cream, refreshing mango basil compote, passion jelly, salted caramel jelly, yoghurt, lime sorbet and strawberry caviar.

The bartenders complete the menu with two exciting drinks – the Dilmah Celebration Pekoe Iced Tea. To mark 25 years of hospitality at Pullman Dubai Creek City Centre, Dilmah Tea has launched a unique celebratory pekoe tea flavored with almond, saffron and honey. Using this as the main ingredient, bartender Valerii Bombizov created this concoction with the Violet Queen.
