Tomer combines flavors and recipes from his Jewish-Moroccan tradition. Each beautiful plate tells its own story, showcasing an aspect of the local Eastern Mediterranean cuisine. George & John’s home, a 19th-century building in the heart of Tel Aviv-Jaffa’s American Colonial neighborhood, is a constant source of inspiration for the Chef and his dedicated team. The founding brothers that bear its name set up shop in one of the country’s first modern hotels; the rest is history. The hotel now houses Jaffa’s first bar and outdoor grill. A variety of charcoal grills and smokers are used in the kitchen: hand-chopped kebabs are cooked in a small traditional Middle Eastern classic; while local wild cabbage is smoked in clay pots in George and John’s garden Smoked in a smoker.
One of the restaurant’s signature dishes is tuna carpaccio served with black garlic sauce, tapioca in broth, seasonal herbs and juicy dates. For a taste of the grill, choose charcoal lamb chops, slow-roasted with tahdig (traditional Persian burnt rice) patties and glazed quinces.
